Born just outside Boston, Massachusetts in 1968, David Edelstein's family relocated to Southern California that summer in search of the promise of opportunity out west.
Growing up in a typical family of that time, David did not always find his mother's cooking palatable. At age 9, David baked his very first Lasagna. At age 11, though using a whole pound of butter in the crust, David baked his first Cheesecake.

At age 12, David took on his first job working for a friends father preparing Sunday newspapers for the news racks. In his 15th summer, David delved into the wonderful world of fast food. That didnt last long as he found a job at a pizza joint... a much "cooler" place to work for a 16 year old. After a short while of flipping pizzas, David was promoted to Kitchen Manager, and was making a whopping $7.75 an hour (not bad for a high schooler in 1984).
David held that position for a year. During that time, David had had enough with high school and graduated early. Around that time, he was offered a significantly higher rate of pay working for a moving company. After doing that for some time, David was offered a job doing dishes and bussing tables at Disneyland. Oh to be a teenager working at Disneyland in the summer. This was only the the half of it, as this would be David's first hands-on formal culinary training under the tutelage of Executive Chef Don Wells. Like a hand towel, David soaked up every bit of information, putting in sometimes 14 hour days.

Being laid off from Disneyland after close to a year and a half, David found himself a little lost. To buy some time and figure out what to do with the rest of his life, he joined the US Air Force as a Crash Fire Fighter in Northern California. His tour lasted just over 3 years. Being injured, David's career as a Fire Fighter was short lived. He relocated back to Southern California where he enrolled in college courses and resumed what he knew best...COOKING.

Working with different restaurants, caterers and banquet facilities for the next couple of years also financed David's Cosmetology education. David did well in this industry, though angering most adavnced education instructors with his use of culinary terms. At one point, the idea of the world's first Rock n Roll Salon and Grill grazed David's imagination. It would have been called
"The Sizzlin' Skillet".
